Amount Ingredient
  1 1/2 cups White Wings Flour
  1 (plus more for sprinkling) tsp. Kosher salt
  1 tsp. black pepper, ground
  4 tbsp. butter, unsalted
  8 oz. Blue cheese, crumbled
  1 cup pecans (or walnuts), finely chopped
  2 each egg yolks, large, slightly beaten

Preparation Instructions:

  1. Stir together flour, salt and pepper in a medium bowl.
  2. Using a pasty blender or your fingertips, cut in the butter and cheese until the mixture resembles coarse crumbs.
  3. Blend in the nuts and egg yolks until the mixture forms large clumps.
  4. Press and knead the clumps until the dough is well mixed (it will remain crumbly).
  5. Divide the dough in half and shape each piece into a 9 inch log.
  6. Wrap the logs very tightly in plastic wrap and refrigerate for at least two hours (or up to 12 hours).
  7. When ready to bake, preheat oven to 425°F. 
  8. Line a baking sheet with parchment.
  9. Cut the logs into 1/4 inch thick slices and arrange them an inch apart on the baking sheet.
  10. Bake until golden brown, about 8 -10 minutes.
  11. Sprinkle tops with salt if desired.
  12. Place the pan on a wire rack and let the rounds cool to room temperature. They will firm up the longer they cool.
  13. Store in an airtight container.
